<p><br><br>Zelfgemaakte kruidenboter is makkelijk te maken en veel smakelijker dan kant-en-klare kruidenboter uit de supermarkt. Varieer eindeloos met verschillende kruiden en kies voor zachte groene kruiden zoals peterselie of bieslook.<br>Wij kozen in dit recept voor peterselie, Oost-Indische kers en citroenmelisse. In onze tuin staat volop Oost-Indische kers, en daarvan zijn zowel de bloemen als de blaadjes eetbaar. De smaak is licht pittig, zoals mosterd, dus gebruik er niet teveel van. De citroenmelisse zorgt voor een frisse smaak.<br>Door de boter op te kloppen voeg je nogal wat lucht toe aan de boter. Hierdoor wordt de structuur mooier, de boter is beter smeerbaar. <br><br><br></p>

<p>Wil je graag een lekkere zelfgemaakte jus bij je aardappelen, groente en vlees? Maar weet je niet waar je moet beginnen? Het maken van een simpele, maar smaakvolle jus is makkelijker dan je denkt, en daar heb je dus geen pakjes en zakjes voor nodig.<br>Vaak wordt er simpelweg water toegevoegd aan het bakvet van het vlees en dat gaat dan over de aardappelen of stamppot, en daar wordt je eten nou niet bepaald lekkerder van. Met een paar smaakmakers en 5 tot 10 minuten extra tijd maak je een heerlijke jus.</p>



<h2 class="wp-block-heading">Hoe maak je zelf lekkere jus?</h2>



<p>Je begint met het aanbakken van een lekker stukje vlees, bijvoorbeeld biefstuk, karbonade of varkenshaas. Zodra het vlees gaar is haal je het uit de pan en verpak je het vlees in aluminiumfolie om warm te houden. Aan het bakvet voeg je een klont roomboter en smaakmakers naar keuze toe. Als smaakmaker kun je van alles gebruiken, bijvoorbeeld spekjes, ui, knoflook, laurier, tijm, mosterd, tomatenpuree, rode wijn of port. De smaakmakers bak je aan in de boter en na een aantal minuten voeg je een eetlepel bloem toe om de jus iets dikker te maken. Dan voeg je koud water of bouillon toe en breng je de jus aan de kook. <br>Het is slim om een dubbele portie jus te maken zodat je wat overblijft in kan vriezen. Voor als je een keer geen vlees eet, maar wel jus wilt.</p>

<p>Tot voor kort hadden wij geen snelkookpan, terwijl het hier in Frankrijk redelijk gebruikelijk is. Bijna iedereen heeft een &#8216;cocote minute&#8217; in het keukenkastje staan. Aangezien wij erg van experimenteren in de keuken houden, zijn we toch overstag gegaan en hebben we <a href="https://amzn.to/4gRazRh">deze snelkookpan</a> aangeschaft. We begonnen met het maken van kippenbouillon in de snelkookpan.</p>



<p><strong>Wat is een snelkookpan?</strong><br>Een snelkookpan is gemaakt van stevig roestvrij staal en de&nbsp;deksel sluit de pan goed af met een siliconen ring tussen de pan en de deksel. Zodra het vocht in de pan gaat koken, verzamelt zich stoom in de pan, waardoor de druk in de pan stijgt. De&nbsp;temperatuur in de pan loopt op tot 120°C.  Zodra de druk verder stijgt laat de drukregelaar in de deksel wat stoom ontsnappen, zodat de pan niet kan ontploffen. Door de hoge temperatuur wordt de bereidingstijd verkort tot ongeveer een derde van de tijd in een normale pan. En dat scheelt ook weer energie!<br>Andere voordelen zijn dat vitamines beter behouden blijven en dat er heerlijke hartige smaken ontstaan door de hoge temperatuur.</p>



<p>Bouillon maken gaat uitstekend in de snelkookpan. Het hoeft niet meer uren op het fornuis te staan en de smaak is intenser. De kippenbouillon en de kip in dit recept kun je gebruiken als basis voor een gerecht zoals bijvoorbeeld kippensoep, ragout of een romige pastasaus. De kip is heerlijk mals een valt zo van het bot, verwijder de botjes en verwerk de kip in je gerecht. </p>



<p>Bouillon bewaren<br>De bouillon kun je een paar dagen in de koelkast bewaren. Zorg er wel voor dat de bouillon goed is afgekoeld voordat je deze in de koelkast zet. Ook kun je de bouillon prima invriezen voor later gebruik.<br></p>



<p><strong>Traditionele kippenbouillon versus snelkookpan: wat is het verschil?</strong></p>



<p>Bij het maken van bouillon wordt vaak aangeraden om het water net onder het kookpunt te houden en niet te laten borrelen. Dit zorgt ervoor dat de proteïnen in de kip (zoals albumine) rustig kunnen stollen en niet door de bouillon worden verspreid, waardoor deze helder blijft. Dit traditionele proces is ideaal als je een glasheldere bouillon wilt, maar het kan uren duren om de smaken volledig te ontwikkelen.</p>



<p>Bij het gebruik van een snelkookpan is het proces anders. Hoewel het water onder druk kookt en zelfs een hogere temperatuur bereikt (ongeveer 120°C), blijft de beweging in de pan gecontroleerd. Dit betekent dat de ingrediënten niet continu borrelen en de smaken zich sneller en gelijkmatig ontwikkelen. Het resultaat is een rijke, smaakvolle bouillon in een fractie van de tijd.</p>



<p>Wil je toch een heldere bouillon? Hier zijn een paar tips:</p>



<ul class="wp-block-list">
<li><strong>Voorbereiding:</strong> Spoel de kip of botten grondig af of blancheer ze kort om onzuiverheden te verwijderen.</li>



<li><strong>Na het koken:</strong> Zeef de bouillon door een fijne zeef of kaasdoek.</li>



<li><strong>Extra klaren:</strong> Voeg een eiwitmengsel toe aan de afgekoelde bouillon en verwarm het langzaam. Dit bindt onzuiverheden, die je daarna eenvoudig kunt verwijderen.</li>
</ul>



<p>De snelkookpan biedt een geweldige oplossing voor drukke dagen, terwijl je met de traditionele methode meer controle hebt over het uiterlijk en de textuur van je bouillon. Beide methoden hebben hun voordelen – het hangt af van je tijd en voorkeur!</p>

<p>Zelf vla maken lijkt misschien ingewikkeld, maar dat is het dus helemaal niet. En de smaak van zelfgemaakte vla is ook nog eens veel lekkerder dan die uit een pak. Wij gebruiken de eidooiers van onze eigen kippen en die dooiers zijn knalgeel, waardoor de vanillevla ook geel wordt. Gebruik je eieren uit de winkel dan kan het zijn dat je vla wit of heel lichtgeel wordt.<br>Door de suiker met de maiszetmeel te mengen voordat je de dooiers toevoegt voorkom je klontjes in de vla. Uiteraard kun je met dit recept eindeloos variëren met smaken.</p>

<p>Deze heerlijke wraps gevuld met kaas zijn heerlijk als borrelhapje of amuse voor een diner. Gebruik een zachte kaas als vulling, zo zijn de wraps makkelijk te rollen en zien ze er ook nog eens mooi uit. De rode wraps zijn gevuld met verse geitenkaas en tomaat en de lichte wraps met blauwe kaas en sla. Wij maakten de wraps zelf, maar uiteraard kun je ervoor kiezen om ze kant en klaar te kopen. </p>



<h2 class="wp-block-heading">Wraps zelf maken</h2>



<p>De wraps maak je makkelijk zelf. De rode kleur van de wraps krijg je door een klein beetje rode bietenpoeder toe te voegen. Dat werkt perfect als kleurstof en is ook nog eens natuurlijk ook. Je kunt de rode bietenpoeder zelf maken of onder andere bij <a href="https://www.hollandandbarrett.nl/shop/product/biotona-bietenpoeder-bio-60032179" rel="sponsored nofollow">Holland&amp;Barrett</a> bestellen. Door het deeg van de lichte wraps deden we wat daslookpoeder voor de smaak. Dat kun je prima vervangen door andere gedroogde kruiden of specerijen.</p>

<p>Een crêpe Suzette is een Frans nagerecht van flensjes met sinaasappel en karamel, geflambeerd met Grand Marnier of een andere sinaasappellikeur. Je kunt de crêpes ruim van te voren voorbereiden (bewaar de gebakken crêpes in de koelkast), en ook de sinaasappels kun je alvast segmenteren. Vlak voor het serveren maak je de karamelsaus en flambeer je de crêpes.</p>



<p>Dit feestelijke dessert is de perfecte afsluiter van een (kerst)diner. Tref tijdens het flamberen wel de nodige voorzorgsmaatregelen. Zet alle keukenbenodigdheden en ingrediënten klaar. Leg een grote deksel klaar om de pan in noodgevallen af te dekken. Flambeer nooit onder een afzuigkap. Houd je hoofd koel en sluit je diner af met een heerlijk en spectaculair nagerecht.</p>

<p>Het grote voordeel van een bijgerecht zoals deze wortelpickle, is dat je het kan voorbereiden en in de koelkast kan bewaren tot gebruik. Deze wortelpickle is zoetzuur en pittig en past heel goed bij een Indiase maaltijd. Trouwens ook erg lekker bij nasi of bami en zelfs op een broodje met een burger. Doordat de wortels maar kort verwarmd worden zijn ze nog lekker knapperig.</p>

<p>Dit dessert is een snelle variant op de originele panna cotta. In ons recept koken we de room niet en daardoor staan de desserts binnen een kwartier in de koelkast om op te stijven. De yoghurt zorgt voor een lekkere frisse smaak. En daar past de aardbeiengelei heel goed bij.</p>
<h5>Ingrediënten (voor 8-10 porties)</h5>
<h5>Panna cotta:</h5>
<ul>
<li>14 gram gelatine (poeder)</li>
<li>500 gram yoghurt</li>
<li>200 milliliter volle melk</li>
<li>200 milliliter room</li>
<li>65 gram suiker</li>
</ul>
<h5> Aardbeiengelei:</h5>
<ul>
<li>2 gram gelatine (poeder)</li>
<li>125 gram aardbeien</li>
<li>20 gram suiker</li>
</ul>

<p style="text-align: left;"><b>1.</b> Begin met het maken van de panna cotta. Laat de 14 gram gelatine minimaal tien minuten wellen in ongeveer 75 milliliter koud water.</p>
</div>
<div style="text-align: justify;">
<p style="text-align: left;"><b>2. </b>Klop in een ruime kom de yoghurt, room, melk en suiker door elkaar.</p>
<p style="text-align: left;"><b>3. </b>Verwarm de gewelde gelatine in de magnetron, ongeveer 15 seconden op 750W. Roer goed door zodat de gelatine oplost. Giet de nu vloeibare gelatine al kloppend met een garde, bij het yoghurtmengsel. Verdeel het mengsel daarna over 8 tot 10 schaaltjes, dek deze af en laat ze in de koelkast opstijven (minimaal 4 uren).</p>
<p style="text-align: left;"><b>4.</b> Maak de aardbeiengelei zodra de panna cotta minstens 2 uren in de koelkast heeft gestaan en enigszins is opgestijfd. Laat de 2 gram gelatine voor de gelei minimaal tien minuten wellen in ongeveer 75 milliliter koud water.</p>
<p style="text-align: left;"><b>5.</b> Pureer de aardbeien met een staafmixer en voeg de suiker hieraan toe.</p>
<p style="text-align: left;"><b>6.</b> Verwarm de gewelde gelatine in de magnetron, ongeveer 15 seconden op 750W. Roer goed door zodat de gelatine oplost. Giet de nu vloeibare gelatine al kloppend met een garde, bij de gepureerde aardbeien. Verdeel het mengsel daarna over de schaaltjes met panna cotta, dek deze af en laat ze in de koelkast opstijven (minimaal 2 uren).</p>

<p><br>Deze heerlijk fris en fruitige granita van meloen is een perfecte afsluiter van een zomers menu. Het is makkelijk te maken en kan ruim van te voren gemaakt worden. Wij gebruikten een cantaloupe meloen, maar uiteraard kun je elke andere meloensoort gebruiken.<br><br></p>

<p><br><br>Hier in Frankrijk vind je het in het voorjaar wel eens op de groenteafdeling, bosjes daslook, vaak naast paardenbloemblad voor door de sla. Nog veel leuker is om zelf daslook &#8216;in het wild&#8217; te plukken. Wij ontdekten vorig jaar een enorme hoeveelheid daslook vlakbij ons huis. Deze keer maakten we er een mooie hoeveelheid pesto mee. Lekker op een stokbroodje of door de pasta.<br><br></p>
