<p>Tartiflette is een gerecht dat je meteen meeneemt naar de besneeuwde bergen van de Franse Alpen. Dit klassieke recept, dat oorspronkelijk uit de regio Savoie komt, is een favoriet onder wintersporters en fijnproevers. Met zijn romige textuur, rijke smaak en eenvoudige bereiding is het perfect voor koude dagen.</p>



<h3 class="wp-block-heading">Wat is tartiflette?</h3>



<p>Tartiflette is een ovengerecht op basis van aardappelen, spekjes, uien en Reblochon, een zachte en romige kaas die typerend is voor de Savoie. Het gerecht werd in de jaren 80 populair, deels dankzij de promotie van de Reblochon-producenten, maar de oorsprong ligt in een traditionele Savoyaardse bereiding genaamd ‘pela’. Tartiflette is eenvoudig te maken en ideaal om te delen met familie of vrienden.</p>

<li><strong>Reblochon vervangen:</strong> Als je geen Reblochon kunt vinden, kun je hem vervangen door een andere zachte, romige kaas zoals Brie, Camembert of Taleggio. Maar voor de authentieke smaak is Reblochon een must!</li>

<h3 class="wp-block-heading"><br><br>Tips voor Perfecte Gnocchi</h3>

<li><strong>Minder is meer:</strong> Gebruik zo min mogelijk bloem. Te veel bloem maakt de gnocchi zwaar.</li>



<li><strong>Werk snel:</strong> Aardappels absorberen meer bloem naarmate ze langer staan, dus werk snel om een zacht deeg te houden.</li>



<li><strong>Niet overkneden:</strong> Kneed alleen tot het deeg samenkomt. Overkneden maakt het deeg elastisch en taai.</li>



<li><strong>Test eerst:</strong> Kook een stukje van het deeg om te controleren of het goed blijft tijdens het koken. Is het te zacht? Voeg iets meer bloem toe.</li>



<li><strong>Bewaaropties:</strong> Gnocchi kun je van tevoren maken en invriezen. Leg ze in een enkele laag op een bakplaat in de vriezer. Als ze bevroren zijn, kun je ze in een zakje doen. Kook direct uit de vriezer.</li>



<li><strong>Gnocchiplank</strong>: in plaats van ribbels in de gnocchi maken met een vork, kun je ook een speciale gnocchiplank gebruiken. Bijvoorbeeld <a href="https://amzn.to/4iYpxGr">deze mooie houten plank</a>.</li>

<li><strong>Saus:</strong> Kies voor lichte sauzen zoals een botersaus met salie, een eenvoudige tomatensaus, of een lichte roomsaus met Parmezaanse kaas. Deze complementeren de gnocchi zonder te zwaar te zijn.</li>

<p><br><br>Ben je op zoek naar een snelle maaltijd, dan is noedelsoep altijd een goed idee. Deze soep is makkelijk te maken en bovendien erg smaakvol en gezond. Wij gebruiken een <a href="https://www.koksinfrankrijk.nl/2023/03/kippenbouillon-uit-de-snelkookpan.html" target="_blank" rel="noreferrer noopener">zelfgemaakte bouillon</a>, maar uiteraard kun je er voor kiezen om bouillon te maken van een blokje. <br>De smaakmakers die in de soep gaan zijn ui, gember, knoflook, rode peper, kaneel, steranijs, citroengras, miso en laos. Een deel hiervan bakken we eerst aan in wat olie, voor nog meer smaak. We gebruiken slechts 2 puntjes van de steranijs en een klein stukje kaneel, zodat de smaak hiervan niet overheerst, maar net aanwezig is. Zodra de soep klaar is komen deze specerijen meestal boven drijven, en kun je ze er makkelijk uitvissen. Vergeet ook niet de citroengras eruit te halen.<br><br></p>

<p><br>Rode kool maken is makkelijker dan je denkt en het smaakt ook nog eens stukken beter dan kant-en-klare. In dit recept gebruiken we appelstroop, dat geeft de het een heerlijke frisse en zoete smaak. Lekker met aardappelpuree en stoofvlees.<br>Door de groente te smoren en de azijn pas aan het einde van de bereiding toe te voegen, krijg je een smaakvol, zacht eindresultaat. Lekker met aardappelpuree en stoofvlees. <br>Wij maken altijd graag een dubbele portie van deze groente. Wil je een keertje makkelijk? Dan haal je een portie uit de vriezer.<br></p>

<p>Deze smaakvolle bami met garnalen en miso staat in een half uur op tafel. Lekker makkelijk voor een doordeweekse avond. De miso is de smaakmaker in dit gerecht. Miso is een gefermenteerde sojapasta. De smaak kan worden omschreven als umami (hartig) en is heel sterk, je hebt er maar weinig van nodig om een gerecht op smaak te brengen.</p>



<p>Wil je liever geen garnalen gebruiken? Deze bami is ook heerlijk met paddenstoelen zoals shiitakes.  </p>

<h4 class="wp-block-heading">Streekgerecht</h4>



<p>Aligot is een traditioneel streekgerecht uit het zuiden van de Auvergne, en wordt vaak beschouwd als comfort food op zijn best. Dit hartverwarmende gerecht bestaat uit een zijdezachte aardappelpuree, rijkelijk gemengd met knoflook, room, boter en de unieke tome fraîche. Aligot is niet zomaar een aardappelpuree; het onderscheidt zich door zijn rijke, kaasachtige textuur die bij elke hap heerlijke, lange draden trekt.</p>



<h4 class="wp-block-heading">Tome fraîche</h4>



<p>Het geheim achter de onweerstaanbare smeuïgheid van Aligot is de tome fraîche, een bijzondere kaas die nog niet volledig is gerijpt. Deze kaas wordt gemaakt van licht gefermenteerde, geperste en ongezouten wrongel. Hoewel tome fraîche technisch gezien geen kaas is, maar eerder een voorstadium, draagt het perfect bij aan de unieke smaak en structuur van Aligot. De zachte, romige smaak met een subtiele zuurgraad maakt het de ideale toevoeging aan dit gerecht. Er zijn drie populaire varianten van tome fraîche: Cantal, Aubrac en Salers. Elk van deze heeft zijn eigen unieke kenmerken, maar de variant gemaakt van rauwe melk, bekend als &#8220;lait cru&#8221; in het Frans, wordt vaak beschouwd als de meest authentieke en smaakvolle keuze voor Aligot.</p>



<p>Het bereiden van Aligot vergt enige vaardigheid en geduld. De puree moet op de juiste manier worden gemengd om die kenmerkende elastische textuur te verkrijgen. De kunst is om de tome fraîche beetje bij beetje toe te voegen aan de warme aardappelpuree terwijl je blijft roeren, zodat de kaas volledig smelt en lange, fluweelachtige draden vormt. Dit proces kan even duren, maar het eindresultaat is de moeite waard: een gladde, smeuïge puree die een genot is voor elke fijnproever.</p>



<p>Voor degenen die geen toegang hebben tot tome fraîche, is er gelukkig een oplossing. Vraag je lokale kaasboer naar een kaas die zeer goed smelt, zoals een jonge Cantal of een zachte raclettekaas. Deze kazen hebben vergelijkbare eigenschappen en kunnen een goede vervanging zijn, hoewel ze misschien niet de exacte smaak en textuur van de traditionele tome fraîche bieden.</p>



<p>Aligot is perfect voor koude winterdagen en past uitstekend bij gegrild vlees, worstjes of een frisse groene salade. Het is een gerecht dat warmte, traditie en eenvoud samenbrengt in één smeuïge, heerlijke hap. Wanneer je een keer iets anders wilt proberen, breng dan de smaken van de Auvergne naar je eigen keuken met dit iconische gerecht.</p>

<p>Lekkere malse varkensfilet met honing en knoflook. Makkelijk te maken en snel klaar. De filetlapjes worden heel even gemarineerd, en door de toevoeging van baksoda aan de marinade blijft het vlees heerlijk mals en bruint het snel bij het aanbakken. </p>



<p>Je kunt dit gerecht ook prima maken met magere karbonades of varkenshaasmedaillons. Serveer met rijst of noodles en groente, bijvoorbeeld Chinese kool. Ook lekker met een frisse salade.</p>

<p>Dit recept voor Vietnamese kip lijkt aardig wat werk, maar uiteindelijk valt het wel mee, en het is zeker  de moeite waard. Het recept bestaat uit verschillende onderdelen die aan het eind samen geserveerd worden. </p>



<p>Je begint met het marineren van de kip. Door een klein beetje baksoda toe te voegen aan de marinade zorg je er voor dat de kip lekker mals blijft tijdens het bakken. Als de kip staat te marineren maak je de groente, de dressing en de saus klaar. Tot slot kook je de noodles en bak je de kip. De groentes zijn beetgaar en serveer je koud. </p>



<h2 class="wp-block-heading">Vietnamese kip met noodles voor 2 personen</h2>



<h2 class="wp-block-heading">Kip marineren</h2>

<li>200 gram kipfilet</li>



<li>1 eetlepel zoete ketjap</li>



<li>1 eetlepel maiszetmeel (maïzena)</li>



<li>2 gram baksoda</li>



<li>1 eetlepel olie</li>
</ul>



<p>Snijd de kip in reepjes. Meng de ketjap, maiszetmeel, baksoda en olie en roer dit door de kip. Laat dit minimaal 15 minuten marineren. </p>



<h2 class="wp-block-heading">Saus</h2>

<li>1 ui</li>



<li>2 teentjes knoflook</li>



<li>1 rode chilipeper</li>



<li>stukje citroengras</li>



<li>1 puntje steranijs</li>



<li>scheutje vissaus</li>



<li>50ml water</li>



<li>olie om in te bakken</li>



<li>geroosterde sesamzaadjes</li>



<li>verse koriander</li>
</ul>



<p>Snijd de ui, knoflook en chilipeper fijn. Kneus de citroengras. Bak de ui, knoflook, chilipeper, steranijs en citroengras aan in wat olie op halfhoog vuur. Laat de ui goed gaar worden. Voeg dan een scheutje vissaus en water toe. Zet het vuur uit en laat staan tot verder gebruik.</p>



<h2 class="wp-block-heading">Groente en dressing</h2>

<li>150 gram wortel</li>



<li>150 gram witte kool</li>



<li>100 gram paprika</li>



<li>2 eetlepels rijstazijn</li>



<li>2 theelepels vissaus</li>



<li>1 eetlepel suiker</li>



<li>4 eetlepels warm water</li>



<li>1 theelepel chilivlokken</li>
</ul>



<p>Snijd de groente in hele dunne reepjes. Blancheer de groentes (beetgaar) en laat ze uitlekken in een vergiet. Los de suiker op in het warme water en meng hier de vissaus, rijstazijn en chilivlokken door. Giet de dressing pas vlak voor het serveren over de groente.</p>



<h2 class="wp-block-heading">Noodles</h2>

<li>175 gram noodles</li>
</ul>



<p>Kook de noodles gaar volgens de aanwijzing op de verpakking. Voeg een beetje zout toe aan het kookwater.</p>



<h2 class="wp-block-heading">Kip bakken</h2>



<p>Bak de gemarineerde kip aan in wat olie. Bak de kip rondom bruin, bestrooi tijdens het bakken met wat zout en giet dan de eerder gemaakte saus erbij. Laat dit heel even pruttelen en voeg eventueel nog een scheutje ketjap toe. Denk er aan de steranijs en citroengras eruit te halen voor het serveren. </p>



<p>Serveer de kip met de gekookte noodles en de groente met dressing. Garneer het gerecht met sesamzaadjes en verse koriander. </p>

<p>Deze pittige groentestoof met harissa is erg lekker en valt altijd bij iedereen in de smaak. De stoofpot is vegetarisch en je kunt er uiteraard zelf voor kiezen om er nog vlees bij de serveren. Merguezworstjes of kipfilet bijvoorbeeld. Wij eten deze stoofpot vaak met couscous.</p>



<p>De pittigheid in het gerecht komt van de harissa. Harissa is een puree van tomaten, rode pepers, komijn, koriander en knoflook. Het wordt veel gegeten in Noord-Afrikaanse landen. Harissa kun je heel goed zelf maken, maar ook net zo goed in de winkel kopen. Het wordt veelal verkocht in handige tubes. Wij gebruiken de harissa van <a href="https://www.ah.nl/producten/product/wi426521/le-phare-du-cap-bon-harissa">Le phare du cap bon</a>, in Nederland onder andere bij de AH te koop.</p>

Ontpit de dadels en snijd ze in reepjes. Snijd de paprika in reepjes, verwijder de kern van de courgette en snijd deze in plakjes. <p>Heerlijke risotto met cantharellen. Herfst is paddenstoelentijd! Wij hebben het geluk in een bosrijke omgeving te wonen, waar, bij ideale omstandigheden, van juni tot en met oktober de lekkerste paddenstoelen te vinden zijn. We weten inmiddels de allerlekkerste te herkennen, te vinden en te bereiden, en de cantharel is daar één van. En bovendien is het ook nog eens erg leuk om te doen. </p>



<p>Dit recept is voor risotto als hoofdgerecht of een flinke lunch voor 2 personen. Serveer je de risotto met cantharellen als voorgerecht, maak dan iets minder. </p>

Halveer (in de lengte) de andere helft van de cantharellen, laat de kleinere exemplaren heel.</div></li><li id="wprm-recipe-9393-step-0-1" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Begin daarna met het bakken van de sjalot, spekjes en de cantharellen in blokjes (op half hoog vuur, in olie). Bestrooi tijdens het bakken met wat zout. Voeg na ongeveer 2 minuten de rijst toe, roer goed door en bak ongeveer twee tot drie minuten op laag vuur mee, de rijst moet glazig zijn. Doe de witte wijn erbij en laat deze inkoken, totdat er geen vocht meer zichtbaar is.</div></li><li id="wprm-recipe-9393-step-0-2" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Voeg een klein beetje hete bouillon toe, en breng het zachtjes aan de kook. Zodra het vocht is opgenomen door de rijst kan, in kleine beetjes, de hete bouillon toegevoegd worden. Voeg telkens, zodra het vocht is opgenomen, een soeplepel toe en blijf ondertussen goed roeren. Ga net zolang door totdat de rijst beetgaar is. Voeg nog wat zout en peper naar smaak toe.</div></li><li id="wprm-recipe-9393-step-0-3" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Zet het vuur uit en doe een klont boter en Parmezaanse kaas bij de risotto. Doe het deksel op de pan en laat de risotto 10 minuten staan. Schep na 10 minuten de boter en de kaas door de risotto.</div></li><li id="wprm-recipe-9393-step-0-4" class="wprm-recipe-instruction" style="list-style-type: decimal;"><div class="wprm-recipe-instruction-text" style="margin-bottom: 5px;">Bak ondertussen de overgebleven helft van de cantharellen in een klont boter, bestrooi tijdens het bakken met wat zout. Zodra de cantharellen gaar zijn kunnen de knoflook, walnoten en de peterselie toegevoegd worden. Zet het vuur uit en serveer dit mengsel over de risotto. Bestrooi de risotto met Parmezaanse kaas.</div></li></ul></div></div>
